Drag and drop works fine (and a warning pops up saying you’re removing sorting). But the order you manually adjust doesn’t hold if you leave and return to the project view.

Just to clarify, manual sorting should work perfectly fine in Akiflow, as long as there is no active sorting option selected that may be overriding your preferred order. This could be the reason why your manually adjusted order isn't being saved when you leave and return to the project view.
